¼ cup olive oil
1/3 cup pure maple syrup
½ tsp. kosher salt
1 ½ cups old-fashioned rolled oats
½ cup unsweetened coconut flakes
1 cup coarsely chopped pecan halves
1. Preheat oven to 300F. Line a rimmed baking sheet with parchment paper.
2. Combine oil, maple syrup, and salt in a bowl. Stir in oats, coconut, and pecans. Spread onto prepared baking sheet.
3. Bake, stirring every 15 minutes, for 40-50 minutes until granola is light golden brown and toasty.
